說到廚房 我也非常有心得
決定來點有營養的文 別讓板友老是覺得我發黑特文
作菜應該是興趣 如果當做只是要填飽肚子 那多沒意思?
別把燒菜做飯想的太難 只要用點心 很快會突飛猛進
像我來說 只要吃到喜歡的菜色 先在心理揣摩一次料理過程
把它記下來 下次逛市場時 就去找相關食材 如果做成功 那可是非常有成就感
不過有些基本功夫還是要有
譬如說 切塊還是切丁或是切絲 油溫要高還是低 易熟跟難熟的下鍋順序
現在的美食節目講的太籠統 反而沒把必要的小步驟給點名出來
我是早上都會看台視7:30~8:00有一段烹飪節目
這個節目估計有10多年的歷史(重播)裡面的主廚是阿基師(好年輕啊!還有嬰兒肥)
從頭到尾主廚不吭聲 只有旁白 場景都是在五星級飯店
擺盤 火候 刀工 都說明的非常清楚
尤其也介紹很多家常菜
儘管可能只是滑蛋蝦仁 蔥爆牛肉的一般菜色
以前我炒肉絲老是糊成一團
看到海產店有過油這一套手續 直到半熟起鍋以後 另炒配料出味之後再重新入鍋
從此之後 不管是蔥爆牛肉 京醬肉絲 爆雞丁 炒起來都駕輕就熟
因為基本功夫都是一樣的 不過實戰真的要多就是了
不過原po的菜色組合 我感覺味道可能不是很搭
花生麵筋炒白菜 @@..........
如果是白菜 我會買爆豬皮+雞件來燒 加點紅蘿蔔絲/香菇配色
洋蔥玉米蛋感覺口感不對 因為玉米洋蔥一硬一軟
建議可去百元快炒 幹一張菜單回來(讓客人打鉤那一種紙質菜單)
先挑出你想煮的菜色 再憑想像去採買相關的材料
接著就請老公準備吃晚飯吧!
如果他不耐煩 開瓶啤酒請他先在桌上看報紙囉!
對了costco有一款平底鍋 很重很深 品牌是kirkland
這一款超好用 因其導熱非常好 只要油一熱 料丟進去 鍋蓋一蓋 悶一悶就非常好吃
不用在那邊又翻又炒 (其實很多翻炒動作都沒意義 因為一般火爐不夠熱)
價格約一千四五 非常值得採買 不熟的手藝都因此鍋的特性會變得好吃
像本鍋燒青菜特別棒 熱點油 丟入青花耶菜 鍋子一蓋 起鍋前捻點鹽灑 wa~~~超好吃
*添醬油時 改用湯匙接 不要直接倒 避免太鹹
*鹽巴用手捻 不要用湯匙灑 也是避免太鹹
